Description

This churro cheesecake recipe combines the crispy, cinnamon-sugar goodness of churros with a smooth, creamy cheesecake filling. Utilizing crescent roll dough for an easy base and top layer, it’s a quick and delicious Mexican-inspired dessert perfect for any occasion.

Ingredients

For the Churro Layers

  • 2 tubes crescent roll dough (8 oz each)
  • ½ cup butter, melted
  • ½ cup granulated sugar
  • 2 tablespoons ground cinnamon

For the Cheesecake Filling

  • 16 oz cream cheese, softened to room temperature
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 large egg, room temperature

For the Topping

  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat and Prepare the Pan: Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish thoroughly to prevent sticking.
  2. Prepare the Base Layer: Unroll one tube of the crescent roll dough and press it evenly into the greased baking dish, making sure to seal all seams. Brush the dough with half of the melted butter and sprinkle half of the cinnamon-sugar mixture over the top to mimic churro flavor.
  3. Make the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and egg together with a hand or stand mixer until the mixture is smooth and creamy without lumps.
  4. Assemble the Cheesecake: Spread the cream cheese filling evenly over the base layer of crescent dough, creating a smooth layer.
  5. Add the Top Layer: Unroll the second tube of crescent roll dough and place it gently over the cheesecake filling. Brush the top with the remaining melted butter and sprinkle the rest of the cinnamon-sugar mixture. Lightly score the top dough with a serrated knife to allow steam to escape during baking.
  6. Bake: Place in the preheated oven and bake for 25–30 minutes or until the top is golden brown and fully cooked.
  7. Cool and Chill: Remove from the oven and allow it to cool on a wire rack for 30 minutes at room temperature. Then refrigerate the dessert for at least 2 hours to set properly before slicing.
  8. Serve: Once chilled, cut into 12 squares and serve. Enjoy this indulgent churro cheesecake warm or cold!
