  • 1 cup light brown sugar (200 g)

  • 1 egg yolk
  • 2 teaspoons vanilla extract (10 ml)
  • 2 cups + 2 Tablespoons all-purpose flour (255 g)
  • 1/2 teaspoon baking soda (2.5 g)
  • 1/2 teaspoon salt (3 g)
  • 1 1/2 cups semi-sweet chocolate chips (half semi-sweet and milk chocolate used) (255 g)


Instructions

  1. Preheat Oven: Heat your oven to 325 degrees F (163 degrees C) to prepare for baking the skillet cookie.
  2. Melt Butter: Place the butter in a microwave-safe bowl and microwave for about 45 seconds until mostly melted. Let it cool to a warm temperature, around 110-120°F, so it blends easily with sugars.
  3. Mix Sugars and Butter: In a medium bowl, combine the melted butter with granulated sugar and light brown sugar. Beat with an electric mixer until the mixture is smooth and well blended.
  4. Add Eggs and Vanilla: Incorporate the large egg, additional egg yolk, and vanilla extract into the sugar-butter mixture. Mix until just combined, ensuring a smooth batter.
  5. Combine Dry Ingredients: Stir in the all-purpose flour, baking soda, and salt gently until just combined to create the cookie dough. Avoid overmixing to maintain tenderness.
  6. Add Chocolate Chips: Fold in the semi-sweet and milk chocolate chips evenly throughout the dough.
  7. Prepare Skillet: Press the cookie dough evenly into a 10 or 12-inch cast iron skillet or any oven-safe skillet, smoothing the surface for even baking.
