Pepperoni Slices:

Instructions
- Preheat the oven: Preheat the oven to 375 degrees F. Place a sheet of parchment paper on a baking sheet.
- Bake the pepperoni: Place the pepperoni in a single layer on the prepared baking sheet. Bake for 10 to 12 minutes until crispy. Remove from the oven, drain excess grease on a paper towel, and chop or crumble the pepperoni.
- Prepare the dip: In a large bowl, combine mayonnaise, roasted red peppers, scallions, Italian seasoning, and crushed red pepper. Stir in the provolone, fontinella, and Parmesan cheeses until well mixed. Adjust seasoning with salt and pepper if necessary.
- Serve or chill: Serve immediately or refrigerate in a sealed container until ready to use. The dip can be made ahead of time and stored in the fridge for up to 4 or 5 days.
