Ingredients
6 boneless skinless chicken thighs (about 1–1/2 pounds)
1/2 teaspoon seasoned salt
1/2 teaspoon pepper
1–1/2 teaspoons olive oil
4 shallots, thinly sliced
1/3 cup white wine or reduced-sodium chicken broth
1 package (10 ounces) fresh spinach, trimmed
1/4 teaspoon salt
1/4 cup reduced-fat sour cream
Instructions
- Sprinkle the chicken thighs with seasoned salt and pepper.
- In a large nonstick skillet, heat the olive oil over medium heat. Add the chicken thighs to the pan and cook for about 6 minutes on each side, or until a thermometer reads 170°F. Remove the chicken from the skillet and keep warm.
- In the same skillet, add the thinly sliced shallots and cook, stirring occasionally, until they become tender.
- Add the white wine or chicken broth to the skillet, bringing it to a boil. Let it cook until the wine is reduced by half, which should take about 3 minutes.
- Add the spinach and salt to the skillet. Cook, stirring occasionally, until the spinach is wilted.
