Ingredients
Filling
- 1 cup cooked chicken, thinly sliced
- 1 1/2 cups matchstick carrots
- 1 avocado, sliced
- 1 cucumber, thinly sliced
- 2 cups rice noodles, cooked according to package directions
- Fresh cilantro and/or mint, to taste
- 8 sheets rice paper
Dipping Sauce
- 1/3 cup teriyaki sauce
- 1/2 teaspoon fresh ginger, grated
- 1/2 teaspoon garlic, grated
- 1 teaspoon sesame seeds
Instructions
- Soften Rice Paper: Fill a 13×9 baking dish or large skillet with warm water. Submerge one sheet of rice paper into the water and let it sit for 20-30 seconds until it becomes soft and pliable.
- Prepare Filling: Carefully remove the softened rice paper and place it on a plate or cutting board. Layer approximately 1/4 cup of carrots, rice noodles, 2 slices of avocado, a few slices of cooked chicken, cucumber slices, and fresh cilantro or mint in the center of the rice paper.
- Roll the Spring Roll: Fold the bottom half of the rice paper over the filling, then fold in both sides snugly, and continue to roll the spring roll tightly to seal and enclose the filling completely. Place the finished roll on a tray or plate.
- Repeat: Repeat the softening and rolling process with the remaining rice paper sheets and ingredients. Once all rolls are prepared, refrigerate until ready to serve.
- Make the Dipping Sauce: In a small bowl, mix together teriyaki sauce, grated garlic, and grated fresh ginger until smooth. Sprinkle with sesame seeds for garnish.
