Description

These cheesy Starbucks-style egg white bites are packed with protein and loaded with red bell pepper, spinach, and cottage cheese for a flavorful and nutritious breakfast option.

Ingredients

Egg White Mixture

  • 16 ounces egg whites
  • ½ cup shredded mozzarella cheese
  • ½ cup whole milk cottage cheese
  • ¼ cup crumbled feta cheese

Vegetables and Seasoning

  • ¼ cup roasted red pepper, finely diced
  • ¼ cup spinach, finely chopped
  • Salt and pepper to taste

Other

  • Cooking spray
  • Boiling water

Instructions

  1. Preheat Oven and Prepare Muffin Tray: Preheat your oven to 350ºF. Place a silicone 12-cup muffin tray on a baking sheet and coat the muffin cups with non-stick cooking spray to prevent sticking.
  2. Blend Egg White Mixture: In a blender, combine the egg whites, shredded mozzarella, cottage cheese, and crumbled feta cheese. Blend for about 30 seconds until the mixture is smooth and bubbly.
  3. Assemble the Bites: Divide the diced roasted red pepper and chopped spinach evenly into each silicone muffin cup. Pour the egg white mixture over the vegetables, filling each cup close to the top. Season each cup with salt and black pepper to taste.
  4. Add Water and Bake: Pour boiling water into the baking sheet so that it comes about halfway up the sides of the silicone muffin cups. Place the baking sheet with the muffin tray on the middle rack of the oven.
  5. Bake Until Set: Bake for 30 to 35 minutes, until the tops of the egg white bites are firm to the touch. Once done, remove from the oven and allow the bites to cool for 5 minutes before carefully removing them from the silicone mold.

Notes

  • Ensure the boiling water is poured carefully to avoid splashing into the egg mixture.
  • Use silicone muffin cups for easy removal without sticking.
  • These egg bites can be stored in the refrigerator for up to 3 days.
  • Reheat gently in the microwave for a quick breakfast option.
  • Feel free to customize with your favorite vegetables or cheeses.
