Ingredients
2.5 pounds cauliflower florets
8 cloves fresh garlic
½ yellow onion, chopped
2 cups chicken broth
½ teaspoon salt
1 teaspoon pepper
8 ounces cream cheese, softened
4 ounces sharp cheddar, grated
Optional toppings: green onion, sour cream, additional cheddar, broccoli florets
Instructions
- Chop cauliflower into florets.
- Add cauliflower, garlic, onion, broth, salt, and pepper to Instant Pot. Seal lid and cook on high pressure for 8 minutes.
- Quick release pressure, then add cream cheese and cheddar.
- Blend with immersion blender until smooth.
- Serve hot with desired toppings.
