Description

These Cat Paw Marshmallows are a fun and adorable treat that will make anyone smile. Ingredients

65 g egg white

190 g granulated sugar

40 g glucose syrup

75 g water

5 g gelatin sheets

5 g vanilla extract

0.2 g red food coloring

Baked cornstarch (for dusting)


Instructions

  1. Prepare the egg whites: Separate the egg whites and freeze them for 10-15 minutes to ensure they whip well.
  2. Make the syrup: In a saucepan, combine the glucose syrup, sugar, and water. Heat the mixture over high heat until it boils, then reduce the heat to low. Do not stir or mix the syrup while heating.
  3. Soften the gelatin: Soak the gelatin sheets in ice water until softened. Then, microwave them until fully melted.
  4. Whip the egg whites: Begin whipping the egg whites at medium speed when the sugar syrup reaches 122°C (252°F). Once the syrup reaches 144°C (291°F), carefully pour it into the whipped egg whites. Add the vanilla extract and melted gelatin sheets and continue whipping until the mixture cools to 40°C (104°F).
  5. Color the mixture: Quickly take out 1/4 of the mixture and mix it with the red food coloring to create a pink mixture. Transfer both the white and pink mixtures into piping bags.
  6. Prepare the mold: Sprinkle cornstarch evenly over the mold to prevent sticking. Pipe the marshmallow mixture into the mold, alternating between the white and pink mixtures to create a two-tone effect. Sprinkle more cornstarch over the top to prevent the marshmallows from sticking.
  7. Set and unmold: Let the marshmallows set at room temperature overnight. Once they’ve fully set, remove them from the mold and they’re ready to enjoy!
