Description

Light and refreshing Caprese Cucumber Snack Bites made with cucumber, hummus, cherry tomatoes, mozzarella, and basil, drizzled with balsamic glaze for a flavorful and healthy snack or appetizer.


Ingredients

½ cucumber, sliced (usually 810 slices)

2 tbsp hummus

5 cherry tomatoes, halved

1 oz mozzarella cheese, cut into small pieces

12 tbsp basil leaves, roughly chopped

½1 tbsp balsamic glaze


Instructions

  1. Slice the cucumber into ½” thick rounds, leaving the skin on or partially peeling for extra crunch.
  2. Lay the cucumber slices flat on a serving plate. Top each slice with a spoonful of hummus, one halved cherry tomato, a small piece of mozzarella cheese, and some chopped basil leaves.
  3. Drizzle balsamic glaze over the top of each cucumber bite.
  4. Serve immediately as a fresh and flavorful snack or appetizer.

Notes

  • For a vegan option, use a vegan mozzarella alternative and chickpea-based hummus.
  • Add black or green olives on top for a Mediterranean twist.
