Description
Light and refreshing Caprese Cucumber Snack Bites made with cucumber, hummus, cherry tomatoes, mozzarella, and basil, drizzled with balsamic glaze for a flavorful and healthy snack or appetizer.
Ingredients
½ cucumber, sliced (usually 8–10 slices)
2 tbsp hummus
5 cherry tomatoes, halved
1 oz mozzarella cheese, cut into small pieces
1–2 tbsp basil leaves, roughly chopped
½–1 tbsp balsamic glaze
Instructions
- Slice the cucumber into ½” thick rounds, leaving the skin on or partially peeling for extra crunch.
- Lay the cucumber slices flat on a serving plate. Top each slice with a spoonful of hummus, one halved cherry tomato, a small piece of mozzarella cheese, and some chopped basil leaves.
- Drizzle balsamic glaze over the top of each cucumber bite.
- Serve immediately as a fresh and flavorful snack or appetizer.

- For a vegan option, use a vegan mozzarella alternative and chickpea-based hummus.
- Add black or green olives on top for a Mediterranean twist.
- Replace hummus with Greek yogurt for a tangier flavor.
