Description
Caprese Chicken Flatbread combines juicy shredded chicken, zesty pesto, melted mozzarella cheese, and fresh cherry tomatoes atop soft naan bread for a quick, flavorful meal. This easy-to-make flatbread is baked until crispy and garnished with fresh basil, perfect for a tasty lunch or dinner.
Ingredients
Flatbread and Sauce
- 2 8-inch flatbreads (naan recommended)
- ¼ cup prepared pesto, plus extra for drizzling
Toppings
- 1 cup shredded mozzarella cheese
- 1 cup shredded cooked chicken (rotisserie chicken preferred)
- 4 ounces cherry tomatoes, halved or quartered
- 1 tablespoon chopped fresh basil
Instructions
- Preheat Oven: Preheat your oven to 425˚F (218˚C) to ensure it’s hot enough for crisping the flatbread and melting the cheese evenly.
- Prepare Flatbread: Place the naan flatbreads on a baking sheet. Evenly spread ¼ cup of prepared pesto over both flatbreads, creating a flavorful base layer.
- Add Cheese: Sprinkle 1 cup of shredded mozzarella cheese evenly over the pesto-coated flatbreads to achieve a melty, cheesy layer.
- Top with Chicken and Tomatoes: Distribute the shredded cooked chicken evenly on top of the cheese. Add the halved or quartered cherry tomatoes on top for freshness and color. Drizzle a little extra pesto over each flatbread to enhance the flavor.
- Bake: Place the baking sheet on the middle rack of the oven and bake for 10-12 minutes, or until the cheese is fully melted and bubbly, and the edges of the flatbread are crispy.
- Garnish and Serve: Remove from the oven and sprinkle with chopped fresh basil. Cut the flatbreads into 3-4 slices and serve immediately while hot and flavorful. Enjoy your quick and delicious Caprese Chicken Flatbread!
Notes
- You can use any flatbread you like, but naan works best for a soft, chewy base.
- Rotisserie chicken is a convenient shortcut for perfectly cooked shredded chicken.
- For a spicy kick, add a sprinkle of red pepper flakes before baking.
- Fresh basil added after baking preserves its bright flavor and color.
- Leftovers can be stored in the refrigerator for up to 2 days and reheated in the oven for best texture.
