Ingredients
Cookie Dough
- 2 cups Cadbury Mini Eggs chocolate candies (roughly chopped, or half M&M’s for the dough)
- 3/4 cup salted butter, room temperature
- 1 cup brown sugar
- 1/3 cup white sugar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 tablespoon cornstarch
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
Frosting
- 3/4 cup salted butter, room temperature
- 3 cups powdered sugar (confectioner’s sugar)
- 1 teaspoon vanilla extract
- 2 tablespoons milk, room temperature
- 2 drops food coloring (pink, blue, or pastel color)
Decoration (Optional)
- 1 teaspoon unsweetened cocoa powder
- 1 teaspoon warm water
- 1 cup remaining chopped Cadbury Mini Eggs for topping
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or foil sprayed with cooking spray to prevent sticking, then set aside.
- Chop Mini Eggs: Roughly chop 2 cups of Cadbury Mini Eggs using the side of a wide chef’s knife to lightly crush them. Set aside.
- Mix Wet Ingredients: In a large mixing bowl, cream together 3/4 cup room temperature salted butter, 1 cup brown sugar, and 1/3 cup white sugar using an electric mixer on medium speed until the mixture is light and fluffy. Add 2 room temperature eggs and 2 teaspoons vanilla extract, then mix until well combined.
- Combine Dry Ingredients: In a separate bowl, whisk together 2 cups all-purpose flour, 1 tablespoon cornstarch, 1/2 teaspoon baking soda, and 1/2 teaspoon salt.
- Make Dough: Gradually add the dry ingredients into the wet ingredients bowl, mixing on medium speed until a cookie dough forms. Be careful not to overmix.
- Add Chocolate and Mini Eggs: Fold in 1 cup semi-sweet chocolate chips and 1 cup of the chopped Cadbury Mini Eggs on low speed until evenly distributed. Reserve the remaining 1 cup of chopped Mini Eggs for decoration.
- Prepare for Baking: Transfer the cookie dough into the prepared baking pan and spread it out evenly with a spatula.
- Bake: Place the pan in the preheated oven and bake for 21 to 24 minutes, or until the edges are lightly golden brown. Remove from the oven and allow the cookie bars to cool completely in the pan.
- Make Frosting: In a large mixing bowl, beat 3/4 cup room temperature butter on medium speed. Gradually add 3 cups powdered sugar one cup at a time, mixing on low and then medium speed between additions until the frosting is light, fluffy, and smooth (about 2-3 minutes).
- Add Flavor and Color: Mix in 1 teaspoon vanilla extract and 2 tablespoons room temperature milk until creamy. Add 2 drops of your chosen food coloring and mix until the color is evenly distributed.
- Frost the Bars: Spread the colorful frosting evenly over the cooled cookie bars using a spatula.
- Decorate with Mini Eggs: Sprinkle the remaining 1 cup chopped Cadbury Mini Eggs over the frosted bars for a festive touch.
- Optional Speckled Decoration: In a small bowl, whisk together 1 teaspoon unsweetened cocoa powder and 1 teaspoon warm water until smooth to create a speckled egg effect.
- Apply Speckles: Dip the end of a dry pastry or silicone brush into the cocoa mixture. Hold it over the frosting and flick the bristles to speckle the frosting and candy pieces. Repeat until you reach the desired look.
- Slice and Serve: Carefully lift the cooled, frosted cookie bars out of the pan using the parchment paper. Slice into 20 bars using a sharp knife, wiping the blade clean between cuts to ensure clean edges. Serve and enjoy!
Notes
- To get clean slices, chill the bars in the refrigerator for 30 minutes before slicing.
- If you can’t find Cadbury Mini Eggs, substitute with chopped M&M’s for a similar taste and texture.
- Use room temperature eggs and butter to ensure even mixing and a tender cookie texture.
- For a more intense cocoa speckle effect, apply multiple layers of the cocoa mixture and let dry between applications.
- You can customize the frosting color with different food coloring to match any holiday or celebration theme.
