Description

This Butter Lemon Garlic Baked Cod recipe delivers perfectly tender and flaky fish with a vibrant garlic and lemon butter sauce. The cod fillets are seasoned, lightly coated in a savory flour mixture, seared to a golden crust, and then baked quickly in the oven for a flavorful and healthy main dish. Garnished with fresh parsley, this recipe is simple, quick, and ideal for a weeknight dinner.

Ingredients

Fish and Coating

  • 2 lbs cod filets
  • 4 tbsp all purpose flour (use gluten free if needed)
  • 1 tsp paprika
  • 1 1/2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt (more or less to taste)
  • 1/2 tsp black pepper

Searing and Sauce

  • 2 tbsp canola oil (to sear fish)
  • 3 tbsp butter (to bake fish)
  • 1 lemon – juice only
  • 3 garlic cloves (pressed)
  • fresh minced parsley (to garnish)

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) so it’s ready to bake the cod after searing.
  2. Prepare the flour mixture: In a wide, shallow bowl, mix together all-purpose flour, paprika, garlic powder, onion powder, salt, and black pepper until well combined.
  3. Season the fish: Pat each cod filet dry with paper towels. Lightly season both sides with salt and black pepper to enhance flavor.
  4. Coat the fish: Dip each filet into the flour mixture, ensuring all sides are evenly dusted for a flavorful crust.
  5. Preheat the pan: Use an oven-safe skillet like cast iron or stainless steel. Heat the pan over medium-high heat for a few minutes, then add canola oil, spreading it evenly as it warms.
  6. Sear the cod: Place the coated filets into the hot pan and sear for about 1 minute on each side until they develop a golden crust. Carefully remove the fish using a spatula and set aside.
  7. Prepare the butter garlic sauce: Lower the heat to medium-low. Add butter to the same pan and let it melt completely. Add the pressed garlic cloves and sauté for a few seconds until fragrant, then pour in fresh lemon juice. Stir to combine the flavors.
  8. Return fish to pan: Place the seared cod filets back into the pan, spooning some of the butter garlic sauce over the top.
  9. Bake the cod: Transfer the skillet to the preheated oven. Bake for 8-10 minutes depending on the thickness of your cod filets. The fish is done when it turns opaque throughout or reaches an internal temperature of 145°F (63°C).
  10. Garnish and serve: Sprinkle fresh minced parsley on top and serve immediately for a delicious, buttery, and lemony seafood dish.

Notes

  • Patting the fish dry before coating helps the flour mixture stick better and ensures a nice sear.
  • If you don’t have an oven-safe skillet, transfer the cod carefully to a baking dish after searing.
  • Adjust seasoning in the flour mixture based on your preference.
  • Use fresh lemon juice for the best bright and tangy flavor.
  • Watch the fish carefully while baking to avoid overcooking and drying out the fish.
  • Gluten-free flour can be substituted to accommodate dietary needs.
