Description

This Burrata Tomato Salad is a fresh and flavorful summer appetizer that combines roasted cherry tomatoes, creamy burrata, and a drizzle of balsamic glaze. Served alongside crispy, garlic-infused sourdough, it’s the perfect dish to kick off a summer meal or enjoy as a light snack.


Ingredients

1 pint cherry tomatoes

2 tbsp olive oil

Salt and black pepper, to taste

1/2 tsp garlic powder

1 burrata ball

2 tbsp balsamic glaze

Sourdough, for serving (toasted)


Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C).
  2. Roast the tomatoes: Wash the cherry tomatoes and place them on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt, pepper, and garlic powder.
  3. Bake the tomatoes: Roast in the oven for 25–30 minutes, or until the tomatoes are soft and slightly caramelized. Remove from the oven and let them cool slightly.
  4. Toast the sourdough: While the tomatoes roast, toast the sourdough slices. You can use a toaster, or for an extra touch, grill them on a grill pan. Once toasted, rub each slice with the cut side of a garlic clove for added flavor.
  5. Assemble the salad: Arrange the roasted cherry tomatoes on a serving platter. Place the burrata ball in the center of the tomatoes. Sprinkle with chopped fresh basil leaves.
  6. Finish the dish: Drizzle the salad with extra virgin olive oil and balsamic glaze. Season with a pinch of salt and a good grind of black pepper.
  7. Serve: Serve immediately with the toasted sourdough slices on the side.

Notes

  • If you prefer a spicier version, add a pinch of red pepper flakes to the roasted tomatoes.
  • For extra flavor, brush the sourdough with olive oil or rub it with roasted garlic before toasting.
  • If burrata is not available, fresh mozzarella or ricotta are good substitutes.
  • For a more heartier dish, add grilled chicken, shrimp, or prosciutto on top of the salad.
