Description
This Burrata Tomato Salad is a fresh and flavorful summer appetizer that combines roasted cherry tomatoes, creamy burrata, and a drizzle of balsamic glaze. Served alongside crispy, garlic-infused sourdough, it’s the perfect dish to kick off a summer meal or enjoy as a light snack.
Ingredients
1 pint cherry tomatoes
2 tbsp olive oil
Salt and black pepper, to taste
1/2 tsp garlic powder
1 burrata ball
2 tbsp balsamic glaze
Sourdough, for serving (toasted)
Instructions
- Preheat the oven: Set your oven to 375°F (190°C).
- Roast the tomatoes: Wash the cherry tomatoes and place them on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt, pepper, and garlic powder.
- Bake the tomatoes: Roast in the oven for 25–30 minutes, or until the tomatoes are soft and slightly caramelized. Remove from the oven and let them cool slightly.
- Toast the sourdough: While the tomatoes roast, toast the sourdough slices. You can use a toaster, or for an extra touch, grill them on a grill pan. Once toasted, rub each slice with the cut side of a garlic clove for added flavor.
- Assemble the salad: Arrange the roasted cherry tomatoes on a serving platter. Place the burrata ball in the center of the tomatoes. Sprinkle with chopped fresh basil leaves.
- Finish the dish: Drizzle the salad with extra virgin olive oil and balsamic glaze. Season with a pinch of salt and a good grind of black pepper.
- Serve: Serve immediately with the toasted sourdough slices on the side.
Notes
- If you prefer a spicier version, add a pinch of red pepper flakes to the roasted tomatoes.
- For extra flavor, brush the sourdough with olive oil or rub it with roasted garlic before toasting.
- If burrata is not available, fresh mozzarella or ricotta are good substitutes.
- For a more heartier dish, add grilled chicken, shrimp, or prosciutto on top of the salad.
