These Buffalo Chicken Quesadillas are the ultimate fusion of spicy buffalo chicken and gooey cheese wrapped in a crispy tortilla. Perfect for a quick meal, game day snack, or appetizer, they offer bold flavors and easy preparation.


Ingredients

2 cups shredded cooked chicken

⅓ cup buffalo sauce (like Frank’s RedHot)

¼ cup cream cheese or ranch dressing

1 ½ cups shredded cheese (cheddar, mozzarella, or a blend)

4 large flour tortillas

1 tablespoon butter or oil for cooking

Optional:

2 tablespoons chopped green onions

Blue cheese crumbles

Jalapeños


Instructions

  • Prepare the filling: In a bowl, mix the shredded chicken with buffalo sauce and cream cheese or ranch dressing until well combined.

  • Heat the skillet: Warm a non-stick skillet or griddle over medium heat. Add butter or oil for extra crispiness.

  • Assemble the quesadillas: Place a tortilla in the skillet. Sprinkle cheese on one half, add the buffalo chicken mixture, and top with more cheese.

  • Fold and cook: Fold the tortilla and cook for 2–3 minutes per side, pressing gently with a spatula until golden brown and crispy.

  • Slice and serve: Let the quesadilla rest for a minute, then slice into wedges. Serve warm with your favorite dipping sauces.

Notes

To make them spicier, add more buffalo sauce or jalapeños.

For a vegetarian version, swap chicken for sautéed mushrooms and bell peppers.
