Ingredients

Filling

  • 2 cups (280 g) rotisserie chicken, finely diced
  • 4 ounces cream cheese, softened
  • ¼ cup buffalo sauce, plus extra for serving
  • 1 cup (113 g) sharp cheddar cheese, shredded
  • 1 cup (113 g) mozzarella cheese, shredded
  • 1 packet (1 ounce / 2 tablespoons) dry ranch seasoning mix

Assembly

  • 8 egg roll wrappers
  • Water, for sealing wrappers
  • Nonstick cooking spray, for air frying

For Serving

  • Ranch dressing or blue cheese dressing


Instructions

  1. Prepare the filling: In a large bowl, combine the finely diced rotisserie chicken, softened cream cheese, buffalo sauce, shredded sharp cheddar cheese, shredded mozzarella cheese, and dry ranch seasoning mix. Stir thoroughly until all ingredients are evenly mixed.
  2. Fill the wrappers: Lay out one egg roll wrapper at a time. Place approximately ⅓ cup of the chicken mixture in the center of the wrapper.
  3. Roll the egg rolls: Lightly wet the edges of the wrapper with water. Fold the bottom corner up to cover the filling, then fold in the right and left corners toward the center. Press lightly to seal and then roll tightly to fully enclose the filling, ensuring the edges are sealed.
  4. Preheat the air fryer: Set your air fryer to 400°F (200°C) to preheat while you finish assembling all the egg rolls.
  5. Air fry the egg rolls: Place the assembled egg rolls in the basket of the preheated air fryer. Depending on basket size, you may need to cook in batches. Spray the tops of the egg rolls lightly with nonstick cooking spray. Air fry for 3-4 minutes, then flip the egg rolls, spray the other side, and air fry for an additional 3-4 minutes or until they are golden brown and crispy.
