Ingredients
32 ounces fresh broccoli
8 ounces carrots (baby carrots or chopped)
1.5 cups celery
1 onion
6 garlic cloves
4 cups chicken broth or vegetable broth
2 cups heavy cream
8 ounces sharp cheddar, shredded
2 teaspoons salt
1/2 teaspoon pepper
Instructions
- Chop broccoli, celery, and onion. Reserve 1/4 of the broccoli florets. Add chopped carrots and garlic.
- Place all vegetables (except reserved broccoli) into crock pot. Add broth. Cook on low for 4–6 hours or high for 3–4 hours.
- Once vegetables are tender, blend until smooth using an immersion blender.
- Stir in heavy cream and cheddar gradually until fully melted. Season with salt and pepper.
- Add reserved broccoli florets and cook on low for 20–30 minutes. Serve warm.
