Description

Ingredients

32 ounces fresh broccoli

8 ounces carrots (baby carrots or chopped)

1.5 cups celery

1 onion

6 garlic cloves

4 cups chicken broth or vegetable broth

2 cups heavy cream

8 ounces sharp cheddar, shredded

2 teaspoons salt

1/2 teaspoon pepper


Instructions

  1. Chop broccoli, celery, and onion. Reserve 1/4 of the broccoli florets. Add chopped carrots and garlic.
  2. Place all vegetables (except reserved broccoli) into crock pot. Add broth. Cook on low for 4–6 hours or high for 3–4 hours.
  3. Once vegetables are tender, blend until smooth using an immersion blender.
  4. Stir in heavy cream and cheddar gradually until fully melted. Season with salt and pepper.
  5. Add reserved broccoli florets and cook on low for 20–30 minutes. Serve warm.
