- 1 pound shrimp, peeled and deveined
- 1 cucumber, sliced
- 1/4 cup remoulade sauce (optional)
Avocado Sauce
- 1 avocado, mashed
- 1 green onion, thinly sliced or chopped
- 2 tablespoons cilantro and/or parsley, chopped
- 1 tablespoon lemon juice
- Salt and cayenne pepper, to taste
Instructions
- Prepare the shrimp: Toss the peeled and deveined shrimp with 1 tablespoon oil and 1 tablespoon creole seasoning until evenly coated.
- Blacken the shrimp: Heat a heavy bottomed pan or skillet over medium-high heat. Cook the shrimp for about 2-3 minutes on each side until they develop a slight blackened crust and are cooked through.
- Make the avocado sauce: In a bowl, combine the mashed avocado, chopped green onion, cilantro and/or parsley, lemon juice, and season with salt and cayenne pepper to taste. Mix well until creamy and smooth.
- Assemble the bites: Arrange cucumber slices on a serving platter. Top each slice with a spoonful of avocado sauce, one blackened shrimp, and a small dollop of remoulade sauce if using.
- Serve immediately: Enjoy these refreshing shrimp cucumber bites as a light appetizer or snack.
Notes
- Ensure shrimp are deveined and peeled for the best texture.
- You can substitute creole seasoning with Cajun seasoning if preferred.
- Remoulade sauce is optional but adds a nice tangy flavor contrast.
- For a spicier kick, increase the amount of cayenne in the avocado sauce.
- Serve immediately to keep cucumber slices crisp.
