Ingredients

Shrimp and Cucumber Bites

  • 1 tablespoon oil
  • 1 tablespoon creole seasoning
  • 1 pound shrimp, peeled and deveined
  • 1 cucumber, sliced
  • 1/4 cup remoulade sauce (optional)

Avocado Sauce

  • 1 avocado, mashed
  • 1 green onion, thinly sliced or chopped
  • 2 tablespoons cilantro and/or parsley, chopped
  • 1 tablespoon lemon juice
  • Salt and cayenne pepper, to taste


Instructions

  1. Prepare the shrimp: Toss the peeled and deveined shrimp with 1 tablespoon oil and 1 tablespoon creole seasoning until evenly coated.
  2. Blacken the shrimp: Heat a heavy bottomed pan or skillet over medium-high heat. Cook the shrimp for about 2-3 minutes on each side until they develop a slight blackened crust and are cooked through.
  3. Make the avocado sauce: In a bowl, combine the mashed avocado, chopped green onion, cilantro and/or parsley, lemon juice, and season with salt and cayenne pepper to taste. Mix well until creamy and smooth.
