Ingredients

For the Spice Mix:

  • ½ teaspoon dried basil
  • ½ teaspoon dried thyme
  • Salt and freshly cracked black pepper, to taste

For the Fish:

  • 2 mahi mahi fillets (about 6 ounces each)
  • 1 tablespoon olive oil
  • Lemon wedges, for serving


Instructions

  1. Prepare the spices: In a shallow bowl, combine onion powder, coconut sugar or brown sugar, smoked paprika, chili powder, garlic powder, dried basil, and dried thyme to create the Cajun spice blend.
  2. Season the mahi mahi fillets: Pat the mahi mahi fillets dry with paper towels. Season both sides with salt and freshly cracked black pepper, then coat all sides evenly with the prepared spice mixture.
  3. Cook the fish: Heat olive oil in a large skillet over medium-high heat. Place the fillets in the skillet and cook for 2-3 minutes on each side until the internal temperature reaches 130°F to 137°F. The fish should flake easily and look opaque when done.
  4. Serve and enjoy: Remove the mahi mahi from the skillet and let it rest for a few minutes. Serve warm, drizzled with fresh lemon juice and accompanied by lemon wedges.

  • Use a digital thermometer for precise fish doneness; mahi mahi is best cooked to medium (130°F to 137°F).
