For the Fish:
- 2 mahi mahi fillets (about 6 ounces each)
- 1 tablespoon olive oil
- Lemon wedges, for serving
Instructions
- Prepare the spices: In a shallow bowl, combine onion powder, coconut sugar or brown sugar, smoked paprika, chili powder, garlic powder, dried basil, and dried thyme to create the Cajun spice blend.
- Season the mahi mahi fillets: Pat the mahi mahi fillets dry with paper towels. Season both sides with salt and freshly cracked black pepper, then coat all sides evenly with the prepared spice mixture.
- Cook the fish: Heat olive oil in a large skillet over medium-high heat. Place the fillets in the skillet and cook for 2-3 minutes on each side until the internal temperature reaches 130°F to 137°F. The fish should flake easily and look opaque when done.
- Serve and enjoy: Remove the mahi mahi from the skillet and let it rest for a few minutes. Serve warm, drizzled with fresh lemon juice and accompanied by lemon wedges.
