  • 1/2 large yellow onion (very thinly sliced)
  • 1/2 pound (8 ounces) ground beef (93/7)
  • 3/4 cup grated carrots (peeled and grated on large holes of box grater)
  • 1 bunch green onions (thinly sliced, about 1/2 cup)
  • Toasted sesame seeds (for topping)

Sauce Ingredients

  • 1 tablespoon soy sauce (regular, not low-sodium)
  • 1 tablespoon oyster sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon mirin
  • 1/4 cup chicken broth (or stock)


Instructions

  1. Make Sauce: In a wide-mouth mason jar, combine soy sauce, oyster sauce, hoisin sauce, mirin, and chicken broth. Seal the jar and shake well to mix. Set aside while you prepare vegetables.
  2. Prepare Vegetables: Peel and grate the carrots using the large holes of a box grater. Thinly slice the green onions and the yellow onion, setting them aside separately.
  3. Cook Beef and Onions: Heat 1 tablespoon toasted sesame oil in a large nonstick skillet over high heat. Add the sliced onion and cook, stirring constantly, until softened and lightly browned. Stir in garlic and ginger paste and cook for 1 minute until fragrant. Push the onion mixture to the edges of the pan. Add ground beef to the center, let it sear undisturbed briefly, then break apart and cook until no pink remains, mixing it with the cooked onions.
  4. Cook Noodles: While cooking the beef, boil the instant ramen noodles in unsalted water according to package instructions. Drain well and set aside.
