For the Banana Bread:
3–4 Very ripe bananas (mashed, about 1 ½ cups)
½ cup Melted butter (unsalted preferred)
1 cup Brown sugar (light or dark)
2 Large eggs (room temperature)
1 tsp Vanilla extract (pure)
1 ½ cups All-purpose flour
1 tsp Baking soda
½ tsp Fine salt
½ cup Walnuts or chocolate chips (optional)
1 tsp Cinnamon (optional)
¼ cup Greek yogurt (optional, for moisture boost)
Instructions
-
Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
-
Mash the ripe bananas in a bowl until mostly smooth, leaving a few chunks for texture if preferred.
-
In a separate bowl, whisk together the melted butter and brown sugar until well combined. Add eggs, vanilla extract, and mashed bananas, mixing until smooth.
-
Fold in the flour, baking soda, salt, and any optional add-ins like walnuts, chocolate chips, or cinnamon. Be careful not to overmix.
-
Pour the batter into the prepared loaf pan and smooth the top.
-
Bake for 55–65 minutes, or until a toothpick inserted comes out clean or with just a few moist crumbs.
-
Allow the banana bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Add-ins: Customize with chocolate chips, walnuts, or dried fruit like cranberries or raisins.
Spices: Add a teaspoon of cinnamon or nutmeg for extra warmth and flavor.
Healthy Version: Swap whole wheat flour for all-purpose flour and use coconut sugar instead of brown sugar for a healthier version.
