Description

This Tofu Deli Meat recipe offers a delicious, plant-based alternative to traditional deli slices. Made with high-protein tofu marinated in a flavorful mixture of vegetable broth, liquid aminos, liquid smoke, and spices, then baked until crispy on the edges, this versatile tofu deli meat is perfect for sandwiches and wraps. It is easy to prepare and can be stored in the fridge for up to 5 days.

Ingredients

Tofu Marinade and Meat

  • 1 (16oz) package high-protein tofu
  • 1/2 cup vegetable broth
  • 2 tablespoons Bragg’s Liquid Aminos (or tamari or soy sauce)
  • 1 tablespoon liquid smoke
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 dash cayenne pepper (optional for spice)
  • 2 tablespoons light olive oil (or other neutral-flavored oil)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) to get it ready for baking the tofu deli meat.
  2. Prepare Tofu: Drain the block of high-protein tofu and pat it dry using a paper towel to remove as much moisture as possible. Use a mandoline slicer or vegetable peeler to create thin shavings of tofu. Place these slices into a shallow container for marinating.
  3. Make Marinade: In a bowl, combine the vegetable broth, Bragg’s Liquid Aminos (or tamari/soy sauce), liquid smoke, smoked paprika, garlic powder, and a dash of cayenne pepper if you want some heat. Stir well to blend all the flavors together.
  4. Marinate Tofu: Pour the marinade evenly over the shaved tofu slices in the shallow container, ensuring all pieces are coated. Let the tofu sit in the marinade for at least 10 minutes to absorb the flavors. For deeper taste, marinate for up to 2 days in the refrigerator.
  5. Prepare Baking Sheet: Grease a sheet pan lightly with 2 tablespoons of olive oil or other neutral-flavored oil to prevent sticking and add flavor.
  6. Bake Tofu: Spread the marinated shaved tofu evenly on the greased sheet pan, including the marinade liquid. Bake in the preheated oven at 400°F (204°C) for 30-35 minutes, flipping the slices halfway through at 15 minutes. Bake until the excess liquid is absorbed and the tofu edges become crispy.
  7. Serve or Store: Use the tofu deli meat immediately in sandwiches and wraps, or allow it to cool and store in an airtight container in the refrigerator for up to 5 days.

Notes

  • Using high-protein tofu ensures the best texture for deli-style slices.
  • Marinating for longer (up to 2 days) enhances the flavor intensity.
  • Flip the tofu halfway through baking to ensure even crispiness on both sides.
  • Store leftovers in an airtight container in the fridge for up to 5 days.
  • You can add extra cayenne or smoked paprika for a smokier, spicier kick.
  • Use these tofu slices as a vegan alternative to deli meat in sandwiches, wraps, or salads.
