Description

This baked salmon recipe features center-cut salmon fillets perfectly seasoned and topped with flavorful basil pesto, making a quick and healthy meal perfect for busy weeknights or elegant dinners. The salmon is baked until tender and flaky, then finished with a fresh pesto spread and served with bright lemon wedges for an added zest.

Ingredients

Salmon and Seasoning

  • Nonstick cooking spray, as needed
  • 2 center-cut salmon fillets (5 ounces each)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Topping

  • 3 tablespoons prepared basil pesto
  • Lemon wedges, for serving

Instructions

  1. Preheat oven: Set your oven to 400 degrees Fahrenheit to ensure it reaches the optimal temperature for perfectly baking the salmon.
  2. Prepare baking pan and salmon: Lightly spray a small rimmed baking pan with nonstick cooking spray to prevent sticking. Place the salmon fillets skin side down onto the pan. Season each fillet evenly with kosher salt and freshly ground black pepper to enhance the natural flavors.
  3. Bake the salmon: Place the prepared pan in the oven and bake the salmon for 18 to 20 minutes, until it is opaque throughout and the internal temperature reaches 145 degrees Fahrenheit, ensuring the fish is safely cooked while remaining moist and tender.
  4. Add pesto and serve: Remove the salmon from the oven and evenly spread the prepared basil pesto over the top of each fillet. If preferred, gently slide a spatula between the flesh and skin to remove the skin before serving. Serve the salmon warm, accompanied by fresh lemon wedges to squeeze over for a bright, citrusy finish.

Notes

  • You can substitute homemade basil pesto for a fresher taste.
  • Check salmon’s internal temperature with a meat thermometer to avoid overcooking.
  • If skin is unwanted, removing it after baking is easier and keeps the flesh intact.
  • Serve with a side of steamed vegetables or a light salad for a balanced meal.
  • Leftover salmon can be stored in the refrigerator for up to 2 days.
