You can choose to bake them for a lighter option or fry them for a classic golden crunch. Served with a tangy honey-soy dipping sauce, they’re perfect for any occasion.


Ingredients

Filling

  • 2 cups broccoli slaw mix
  • 2 tablespoons parsley, chopped fine
  • 2 tablespoons butter (or substitute with I Can’t Believe it’s Not Butter!)
  • 1 1/2 tablespoons minced garlic
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon sesame oil
  • 1/2 tablespoon honey
  • 1 1/2 cups pre-cooked shrimp, shelled (about 25 small shrimp)

Egg Rolls

  • 8 egg roll wrappers
  • Water (for sealing egg rolls)
  • Oil for frying or additional butter for baking

Dipping Sauce

  • 1 1/2 tablespoons honey
  • 2 tablespoons soy sauce
  • 1/2 tablespoon sesame oil
  • 1 teaspoon ginger
  • 1/2 teaspoon sesame seeds


Instructions

  1. Preheat Oven or Heat Oil: If baking, preheat your oven to 400°F (204°C). If frying, heat oil in a shallow pan to 375°F (190°C).
  2. Sauté Vegetables: In a large pan, melt the butter over medium heat. Add broccoli slaw mix, parsley, and minced garlic, and sauté for 1-2 minutes until softened.
  3. Add Seasonings: Stir in ground ginger, sesame oil, and honey, and continue sautéing for another minute to blend the flavors.
  4. Add Shrimp: Toss the pre-cooked, shelled shrimp into the vegetable mixture. Stir well, then remove the pan from heat.
  5. Assemble Egg Rolls: Place about 2 tablespoons of the shrimp and vegetable mixture onto the center of each egg roll wrapper. Use water to moisten the edges and roll tightly according to the package instructions.
  6. Frying Option: Carefully place each rolled egg roll into the hot oil at 375°F. Fry for 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.
  7. Baking Option: Brush each egg roll with melted butter and place on a greased or sprayed baking sheet. Bake in the preheated oven at 400°F for 10-12 minutes, turning halfway through to brown evenly.
