Description

A simple and delicious Avocado Toast topped with eggs prepared four different ways: fried, scrambled, boiled, and poached. This versatile recipe offers various cooking methods with helpful tips to enjoy a nutritious and satisfying breakfast or snack.

Ingredients

Base Ingredients

  • ½ small avocado, seeded and peeled
  • 2 slices bread of choice
  • Salt and pepper to taste

Egg and Cooking Essentials

  • 2 large eggs
  • 1 tablespoon olive oil or butter (optional)
  • 2 teaspoons white vinegar (for poached eggs)

Instructions

  1. Toast the bread: Toast two slices of bread in a toaster until golden and crispy, providing a crisp base for the avocado and eggs.
  2. Prepare the avocado: Place the peeled and seeded half avocado over the toasted bread, slice it, and then mash it evenly on top of the toast for creamy texture and flavor.
  3. Cook the eggs – Fried eggs: Heat olive oil or butter in a nonstick skillet over medium-high heat until hot. Break the eggs onto the skillet and immediately reduce heat to low. Cook uncovered for 5-7 minutes until the egg whites are completely set and yolks reach desired thickness.
  4. Cook the eggs – Scrambled eggs: Heat olive oil or butter in a non-stick skillet over medium-high heat until hot. Whisk the eggs in a small bowl, then pour into the middle of the pan. When edges start to set, gently fold the eggs continuously until fully cooked in about 2-3 minutes.
  5. Cook the eggs – Boiled eggs: Place eggs in a saucepan and cover fully with cool water. Bring the water to a rolling boil, then reduce heat to low and cook as follows: 4 minutes for soft boiled, 6 minutes for medium boiled, or 12 minutes for hard boiled. Transfer to ice water after cooking, cool completely before peeling.
  6. Cook the eggs – Poached eggs: Bring a large pot of water to a boil. Stir in 2 teaspoons of white vinegar and create a vortex by stirring the water. Lower heat to maintain a gentle boil. Crack an egg into a small bowl, then carefully add it to the center of the vortex. Cook for 3-4 minutes depending on doneness preference. Remove with a slotted spoon.
  7. Assemble and season: Place the cooked eggs of your preferred style on top of the mashed avocado toast. Season with salt and pepper to taste and serve immediately.

Notes

  • You can use any type of bread such as sourdough, whole grain, or gluten-free as preferred.
  • Adjust salt and pepper to taste or add other toppings like chili flakes, lemon juice, or fresh herbs for variation.
  • For a richer flavor, use butter instead of olive oil for cooking eggs.
  • The vinegar in poached eggs helps the whites coagulate faster and improves shape.
  • Use fresh eggs for best results, especially when poaching.
  • Storage: Eat immediately for best texture; avocado will brown if left too long.
