Ingredients

For the Whipped Goat Cheese:

  • 8 ounces goat cheese
  • 1 lemon, juiced and zest freshly grated

For the Fritters:

  • 2 cans artichoke hearts in water, drained
  • 2 large eggs, lightly beaten
  • ½ cup all-purpose flour
  • ½ cup finely grated parmesan cheese, plus more for topping
  • 1 garlic clove, minced
  • 1 pinch crushed red pepper flakes
  • kosher salt and pepper, to taste
  • 2 to 3 tablespoons olive oil, for cooking
  • fresh chopped parsley, for topping


Instructions

  1. Make the Whipped Goat Cheese: Add the goat cheese, lemon juice, and zest to a food processor. Blend until smooth and creamy. Transfer to a bowl and set aside.
  2. Prepare the Fritters: Pat dry the artichoke hearts and chop them coarsely. In a bowl, mix eggs, flour, parmesan, garlic, red pepper flakes, salt, and pepper. Fold in the artichokes.
  3. Cook the Fritters: Heat olive oil in a skillet. Spoon ½ cup of batter per fritter into the pan. Cook until golden and crispy on both sides. Repeat with remaining batter.
  4. Serve: Sprinkle fritters with parmesan and parsley. Serve with whipped goat cheese.
