Ingredients
For the Whipped Goat Cheese:
- 8 ounces goat cheese
- 1 lemon, juiced and zest freshly grated
For the Fritters:
- 2 cans artichoke hearts in water, drained
- 2 large eggs, lightly beaten
- ½ cup all-purpose flour
- ½ cup finely grated parmesan cheese, plus more for topping
- 1 garlic clove, minced
- 1 pinch crushed red pepper flakes

- 2 to 3 tablespoons olive oil, for cooking
- fresh chopped parsley, for topping
Instructions
- Make the Whipped Goat Cheese: Add the goat cheese, lemon juice, and zest to a food processor. Blend until smooth and creamy. Transfer to a bowl and set aside.
- Prepare the Fritters: Pat dry the artichoke hearts and chop them coarsely. In a bowl, mix eggs, flour, parmesan, garlic, red pepper flakes, salt, and pepper. Fold in the artichokes.
- Cook the Fritters: Heat olive oil in a skillet. Spoon ½ cup of batter per fritter into the pan. Cook until golden and crispy on both sides. Repeat with remaining batter.
- Serve: Sprinkle fritters with parmesan and parsley. Serve with whipped goat cheese.
