Ingredients
4 chicken breasts (each sliced horizontally in half)
2 cups Monterey Jack cheese
Salt, to taste
Black pepper, to taste
Paprika, to taste
Cooking oil, for browning
⅓ cup mayonnaise
1 Tbsp honey
2 tsp stone-ground mustard
Instructions
- Preheat oven to 350°F (175°C).
- Season chicken with salt, pepper, and paprika.
- Brown chicken in a skillet with oil over medium-high heat, then transfer to a 9×13-inch baking dish.
- Mix mayonnaise, honey, and mustard in a bowl to make the sauce.
- Spread sauce over each chicken piece and top with cheese.
- Bake for 25–30 minutes until chicken reaches 165°F and cheese is melted and bubbly.
- Serve immediately, optionally with extra sauce on the side.
Notes
- Use different cheeses like Cheddar or Colby Jack for variation.
- Add sliced mushrooms or onions under the cheese before baking.
- To lighten the dish, use Greek yogurt instead of mayonnaise.
- Tent with foil if cheese browns too quickly in the oven.
- Prepare chicken and sauce ahead and assemble just before baking.
