Ingredients

Chicken and Seasoning

  • 1 1/2 lbs boneless skinless chicken thighs, cut into 2 inch pieces
  • 1 1/2 Tbsp garlic and herb seasoning
  • 1 Tbsp olive oil
  • 6 skewers (metal or bamboo)

Garlic Parmesan Butter

  • 1/2 cup unsalted butter, softened to room temperature
  • 4 cloves garlic, minced or grated
  • 1 Tbsp garlic and herb seasoning
  • 1/2 tsp kosher salt
  • 1/3 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Prepare skewers: If using bamboo skewers, soak them in water for at least 30 minutes to prevent burning. Metal skewers do not require soaking but ensure they fit comfortably in your air fryer basket. You can also trim full-sized bamboo skewers if necessary.
  2. Season chicken: Place the chicken thigh pieces in a large mixing bowl. Drizzle with olive oil and toss to coat evenly. Add garlic and herb seasoning and massage it into the chicken using your hands, rubber spatula, or tongs for thorough seasoning.
  3. Thread chicken onto skewers: Carefully thread about 7-8 chicken pieces onto each skewer. Arrange skewers on a plate and set aside.
  4. Preheat air fryer: Preheat the air fryer to 400°F (204°C) for a few minutes to ensure even cooking.
  5. Cook first side: Place the chicken skewers in a single layer inside the air fryer basket, making sure there is space around each skewer. Cook for 8 minutes.
  6. Prepare garlic parmesan butter: While the skewers cook, combine softened butter, minced garlic, garlic and herb seasoning, kosher salt, chopped parsley, and grated Parmesan cheese in a small bowl. Mix thoroughly to create the flavorful butter.
  7. Flip and baste: After 8 minutes, carefully flip each skewer over using tongs. Brush the cooked side liberally with the prepared garlic parmesan butter.
  8. Continue cooking: Return the skewers to the air fryer and cook for another 7 minutes, or until the internal temperature reaches 165°F (74°C).
  9. Final brush and serve: When fully cooked, flip the skewers again and brush the other side with garlic parmesan butter. Serve the skewers hot with extra garlic butter on the side for dipping if desired.
